Instructions:
1. Prepare the Chutneys:
- Tamarind Chutney: Soak tamarind in warm water for 15-20 minutes. Squeeze the tamarind pulp and strain out the liquid. Cook the tamarind pulp with jaggery, dates, and spices until it thickens into a chutney-like consistency.
- Green Chutney: Blend together mint leaves, coriander leaves, green chilies, ginger, lemon juice, and salt with a little water to form a smooth chutney. Adjust the spice level to your preference.
